- Grape variety: Cabernet Sauvignon
85%; Cabernet Frnc 15%
- Elaboration: Harvest in the
first week of October 1997. Fermented in stainless steel tanks at
25ºC for twelve days. It has an ageing of twelve months in new American
oak barrels. Bottled in April 1999.
- Colour: Ruby with garnet notes
and a weak touch of age.
- Aroma: Intense and complex,
where one emphasises the good maturation of the grapes very well
combined with the notes given by the wood. Vegetal spices aroma
of a cabernet of a good harvest.
- Taste: The flavour shows mature
tannins, very well harmonised with the alcohol and the structure
of the wine. In the taste, the end of the flavour leaves a reminder
of black chocolate. It will clearly improve the age in the bottle
where the tanning ends will be softemed and will give away to a
complex wine.
- Recommendations: It should
be served at a temperature between 16ºC and 18ºC.
- Accompaniment: It is specially
recommended for roast meats and stew wehere the quality of this
wine will be increased.
